Faux Couscous Pompadori

Chicken Faux Couscous Pompadori






1 cup diced chicken, cooked and kept warm

2 cups of cauliflower, riced
(I used frozen cauliflower and my P-Chef chopper)

1 tomato, seeded and chopped
2 cloves of garlic minced
olive oil
salt & pepper
dried basil
garlic powder


Place cauliflower on a paper plate, drizzled with olive oil, salt and pepper, cover with plastic wrap and microwave for 2 minutes.

In fry pan add: cauliflower, garlic, tomato, and a dash of each, basil, garlic powder, salt and pepper, and a splash more of olive oil.

Heat till all the ingrediants marry, about 2 minutes. Add chicken, toss and serve.

  1. Wow i need to try this one! I would add dash of kurkuma or curry for yellow color. As a quite fresh lowcarber, I still search for inspirations and ideas that will help me enjoy my diet to the fullest- and you've got about 10 years of expirience of dieting with this method, and so many recipes wonderfully low in carbs. So, surely I'll be back to this site :)
