The Perfect Boiled Egg ~ Delicious Deviled Eggs



Ah the perfect egg..... So simple if you follow these few steps.

1 dozen eggs (make sure they are as fresh as you can get them)
1 medium pan
Enough water to cover the eggs about 1"
2 cups of ice

Put eggs in pan with water.  Bring to boil and bring down to a simmer. Put timer on for 12 minutes.   When done drain water and rinse with cold water 3 times. Fill pan with cold water leaving and add ice.  Let sit for 5 minutes. 
Crack and peel eggs under the water.  Place peeled egg back in water too cool.  
(If the white of the egg gets cut in anyway, let cool on plate)
Dry eggs in put into plastic baggy.  Refrigerate.


Deviled Eggs (passed down from my mom)



1 dozen hard boiled eggs sliced length wise, yolks gently taken out and put into a bowl.




With fork mash yolks very fine.
 Add to yolks 9 tablespoons of mayonnaise and 1 tablespoon of yellow mustard. Stir and mash down with the back of a spoon.



Fill each egg with yolk mixture and sprinkle with paprika.




*My favorite way to eat a deviled eggs is to top with chopped baby midget pickles.

Quick Mousse For One or Frosting for a Minute Muffin






If you have a sweet tooth or need a quick frosting for a cake, try this mousse.. To Die For!!


1 teaspoon sugar free pudding mix
4 tablespoons cream

Mix together until thick, refrigerate for 1/2 hour
*I only had white chocolate sf pudding mix so I added 1/2 teaspoon cocoa.

Chicken Soup






A low carb Whoosh is when you eat the right fat burning foods and you loose 1-5 pounds of fat in a few days. This chicken soup is one of the fat burning recipes you can use.
8 ounces of chicken cut up
4 packages of individual chicken broth packages (low sodium)
1 cup celery (tops, stalks) 
1 onion, chopped large
1/2 bag frozen cauliflower florets
1/2 bag frozen large leaf spinach
salt, pepper, and whatever spice you like
enough water to fill a medium sized pan (may need extra)

In pan combine chicken, water, bullion, celery, onion, and spices. Bring to boil then to a simmer. Cook for 1 hour checking to see if more water is needed. Then add cauliflower and spinach. Cook for an additional 15 minutes. Serve :)

Chocolate Milk Shake




2 tablespoons of powdered erythritol 
1 Hershey's Dark Cocoa

Process till fine.  Add below ingredients and process till you do not hear ice crushing

1 teaspoon vanilla
1/2 cup unsweetened almond milk
1/2 cup heavy cream
1/2 cup crushed ice
1/8 teaspoon of thickener 
3 packs of Equal

Chocolate Baker's Mix


I may have posted a recipe for this but it is worth the repeat

In my Magic Bullet I put equal parts:
PB flour
almond flour
erythritol (found at netrition.com)
Hershey's Dark Coca

Process above mixture till it is fine, taste to see if it is sweet enough.   

I use this bake mix to make Oreos.  Take as much as you need and slowly add hot water and 1 teaspoon of vanilla to mixture, bake at 350o for around 20 minutes until crisp

I also use this in MIM (muffin in a minute)   
4 tablespoons above mixture
1 egg
1 tablespoon cream
1 tablespoon butter soften
1 tablespoon water
1/2 teaspoon baking powder
1 teaspoon vanilla

Mix thoroughly and microwave for 1 minute.

*warning I ate the mixture right out of the container it tastes like Nestle's Quick :)

Jalapeno Poppers My Way



Picture shown before cooking and bacon added

6 jalapeno peppers
6 ounces cream cheese
6 pieces bacon

Preheat Oven 375o
 Remove tops and with a paring knife gently separate membrane from pepper. Remove as much of the insides and gently tap out seeds. Cut a piece of cream cheese and roll in hands. Slide down the pepper. Wrap bacon around outside and bake at  for 25 or so.

SF Sweetener Chocolate Mix & Chocolate Oreo Bars (used for many things especially Oreos and chocolate filling)

Erythritol is a low carb, low glycemic, all natural sweetener, It will not raise blood sugar.  You can purchase erythritol at netrition.com 

Take equal amounts of erythritol and Hershey's Dark Cocoa
 process in a coffee grinder, bullet, or processor until light and fluffy. Mixture should taste sweet but not over powered by the erythritol.  If more sweetener is needed add and process again. Keep in a container with lid until ready to use.

For Oreo Cookie Bars:
2 tablespoons above mixture
1 tablespoon almond flour
1 teaspoon vanilla
Hot water

Preheat Oven 350o
Mix first 4 ingredients and slowly add hot water till a pliable dough forms.  On a parchment line, small cookie sheet roll dough out to a think layer.  Bake for 8 minutes, check to see if cookie's texture is that of a cracker if not bake another 4 minutes. Cool

Cream filling
Cream together:  1 tablespoon unsalted butter with 1 tablespoon shortening, add teaspoon vanilla and mix again.  Slowly add chocolate mix, tasting to see check sweetness level.  Fill Cookie Bars and refrigerate 15 minutes.

Oreo Cookies For One



3 tablespoon almond flour
2 tablespoons Hershey's Dark Chocolate Cocoa
1 tablespoon peanut flour
4-5 packets Splenda
1 teaspoon vanilla
1 or more tablespoons of hot water

Preheat Oven 350o
Mix first four ingredients and add 4 packets Splenda.  Taste too see if it is sweet enough if not add more.  
Slowly, by teaspoons full add hot water until a dough forms.  You only want this dough to form and not to be sticky.  
Press dough out thin and use a shot glass to make a four round circles. Bake on greased cookie sheet for 4 minutes and turn over bake for an additional 3-4 minutes.  Cookies should almost have a crisp, dry texture.

Filling
4 packets Splenda, or more depending on how sweet you like it.
1 teaspoon vanilla
1 tablespoon shortening
1 tablespoon unsalted butter

Dissolve Splenda in vanilla.  Then cream together with shortening and butter.  Fill Cookies

Sloppy Joes




4 sleeves of Steak Umms or shaved steak
1 tablespoon olive oil
1/2 small onion diced
1 clove garlic
2 tablespoon sf tomato ketchup
1/2 tablespoon yellow mustard
1/2 sf maple syrup
Fry onion and garlic in olive oil until translucence.  Add steak and fry till done.  Drain.  Add rest of ingredients and simmer for 3 minutes. 


Muffin In A Minute

     


                                                     
1 tablespoon peanut flour
1 tablespoon Hershey's Dark Cocoa
2 packets Splenda
1 packet of Equal
1 egg
1 tablespoon oil
1/2 teaspoon vanilla
1/4 teaspoon baking soda

Mix all ingredients  thoroughly microwave for one minute.  

Caramel Glaze:
2 tablespoon sugar free caramel syrup
A sprinkle of thickener, I used glucomannan
one drop of each:  red and yellow food coloring
Mix together and pour over top.

Oreo Filling
5 tablespoons powered sugar
1/8 teaspoon vanilla
1 tablespoon shortening 
small amount of hot water

mix sugar vanilla and shortening add hot water until smooth

Coffee Cake In A Minute




This coffee cake is just like the real thing.  My recipe calls for glucomannan you can substitute this with gaur gum or arrowroot or some other thickening agent.  It also calls for Protein Crunch that you can omit


1 egg
1 tablespoon heavy cream
2 tablespoons butter
2 packages Splenda
1/8 teaspoon glucomannan
2 tablespoon almond flour
1/4 teaspoon baking powder
1/4 teaspoon vanilla
1/4 teaspoon lemon juice
1/2 teaspoon cinnamon
1 tablespoon protein crunch

In bullet or food processor beat egg, heavy cream and sprinkle 1/2 the glucomannan.  Process for a few seconds and sprinkle remaining glucomannan, process again.
Add butter, almond flour, baking powder, vanilla, lemon juice, cinnamon,and Splenda,  process again until smooth.
Add topping below

Topping
 (will come out crunchy if you bake instead of microwaving)
1 tablespoon almond flour
1-2 teaspoons butter
1 teaspoon sf maple syrup
Mix above ingredients until crumbly

Place batter in a microwave, greased glass bowl.  Add protein crunch and slight mix.   Add topping and microwave 1-1 1/2 minutes.   Topping will not be crunchy as if you were to bake it but  be buttery and yummy.
When done sprinkle a little cinnamon on top

* This recipe can be made in the oven on 350o for 30 minutes.  Can be doubled or tripled ect.. Topping will be crisp

Coconut Bars Pic Coming Soon


1/2 cup unsweetened coconut, processed until fine
3 tablespoon butter, softened 
1 egg
14 tablespoon granulated Splenda
1/4 teaspoon vanilla
1/4 teaspoon baking soda
1/4 teaspoon cream of tarter

Preheat Oven 350o
Cream butter and Splenda together and add rest of ingredients.  Process till smooth.  In a small greased pan pour batter and bake for 20-25 minutes or until golden brown.

Jalapeno Poppers Chicken Salad



6 jalapeno peppers
6 ounces chicken breast, cooked and shredded
6 ounces cream cheese, room temp.
6 slices bacon, cook and cut into small pieces 

Slice jalapenos length wise and clean out seeds. Place on cookie sheet skin side up and broil until skin turns black.  Take out of oven and clean skin off.  (should slide off easy)   
Dice jalapenos and mix with cream cheese.  
Bake at 425o  for 25 minutes.  Toss in bacon and serve.

This also makes a great cold dip

OMG!! No Bake Cookie For One


1 tablespoon sugar free peanut butter
1 1/2 teaspoons butter
1 teaspoon cocoa
2 packets Splenda
2 tablespoons unsweetened coconut
1 tablespoon of chopped nuts or protein crunchies 

Slightly melt peanut butter and butter, stir in cocoa and Splenda.  Add chop nuts and make two round cookie forms.  Refrigerate for 15 minutes... or not... I didn't

Chocolate Cake







1/2 ounces bakers chocolate
2 tablespoons butter
2 egg yolk
2 egg white
2 tablespoon powdered erythritol or other sweetener




Preheat oven to 300 degrees.
In a microwave safe bowl, melt the chocolate and butter for 30 seconds. Stir until smooth.
Whisk in the egg yolk and sweetener.
Beat egg whites until stiff and glossy peaks form.
Fold chocolate mixture gently into the egg whites until blended well.
Butter or spray a small glass pan or 4 ramekins and place above mixture in it. 
Bake for 28 minutes or until the top is crispy and the sides are pulling away from the sides.
Remove to wire racks, and cool 10 minutes before gliding a knife around the edges and turning the cakes on to a serving plate.
Serves 4

Habanero Cheese Crackers


1/2 egg, beaten
1 cup almond flour
1/2 cup habanero cheese, shredded  
(I used Cabot's cheese.  Can use sharp cheddar)
2 tablespoons butter, softened
1/2 teaspoon salt
1/8 teaspoon baking powder

Preheat oven 375o
Combine egg, flour, salt, and baking powered mix until crumbly.  Add 1 tablespoon butter and mix till soft dough is formed.  Add more butter if needed then add cheese.
On a greased or parchment paper lined small cookie sheet spray vegetable spray add dough and form a small thin rectangle.  Bake 10 minutes or until brown.

Easy Induction Friendly Recipes.... Steak Umms



Induction can be so frustrating because we can get into a  very monotone way of eating.  Basically eating the same food everyday. Induction does not have to be boring it actually can be a lot of fun if you take one main protein ingredient and see how many recipes you can make out of it.   
The above photo is a few sleeves of Steak Umms cooked on one side and when I turned it over I broke an egg over it.continued cooking until the egg was cooked to my liking..  
Next time I cook this recipe I am going to add bacon, YUM...  and maybe in the following day change it up by adding cheese, vegetables ect...

LC Tiramisu For One





Cake
2 ounces of cream cheese, room temputare
2 eggs
1 package of Splenda

Mix well in Bullet or Blender.
In a hot skillet pour in mixture.
Cook till golden brown on each side.
Cut into 4 pieces, then trim into squares.

1/4 cup of cold coffee 
(I took 1/4 cup right out of my coffee cup, sweetened)

Pour over the cake and let sit.

Filling
2 ounce of cream cheese, room temperature.
1 tablespoon of caramel sugar free syrup
1 package of Splenda

Mix well put aside.

1/2 cup cream
Put cream in bowl and whip til firm peaks form (whipped cream)
Fold in cream cheese
Layer filling with cake and sprinkle cocoa after each layer.

Chicken-Spinach Alfredo










2 thick slices of bacon
1 boneless chicken breast, cut into cubes
1/2 package of frozen spinach, cooked according to package directions. 
(may substitute broccoli florettes)
4 tablespoons cream
3 tablespoons Parmesan cheese
1 tablespoon butter
1 teaspoon minced garlic (I use the refrigerated kind)
Salt & pepper 


In a skillet (I use cast iron)  fry bacon till done and remove from skillet, crumble, and put aside reserving the grease to cook chicken in.   
Add cubed chicken and fry till done.  Remove chicken.

In a small pan, on low heat put cream, Parm. cheese, butter, garlic, and s&p heat until cheese is melted.
Add add chicken, spinach, and crumbled bacon.

Spicy Country Fried Chicken




1 Chicken Breast, pounded flat and cut into strips
1/2 Frank's Buffalo Sauce

Put chicken in bag add sauce and let sit for around an hour.

Next put in same bag:
2 tablespoons of almond flour
2 tablespoons parm. cheese

Shake well then place on plastic wrapped dish and freeze for 40 minutes.

5 minutes before cooking:
Fry 2 slices of bacon in a pan when done put aside.  In the same grease add chicken pieces and fry til done.  Scrap out of pan any pieces of the breading remaining and crumble bacon,put over chicken.

Serve with Ranch or Blue Cheese Dressing

Baked Eggs







Spray pan with cooking spray.

Cook bacon half way then line the muffin pan with it.

Then crack an egg in the center. Salt and pepper

bake for 12 minutes


*You can you Canadian Bacon put don't need to pre cook

LC Steak Umm's Manocotti and Lasagna









Preheat oven to 375o
Filling
1 small container of Whole Milk Ricotta
1 cup shredded whole milk mozzarelal (plus extra for topping)
1/2 beaten egg
1 package of Splenda (or two pinches of sugar)
pinch of parsley
Mix together
4 sleeves of Steak Umms
1 cup of sauce (I use Hunt's no sugar)
You are going to take one steak umm and put it on another leaving the paper on bottom of that.. Repeat with 2nd steak umm...

Microwave in 10 second intervals until slightly defrosted..
(If you cook any longer the steak umm will fall to pieces)
Take 1/2 the cheese mixture and fill length wise (pic above). Roll into manocotti shape.
Top with sauce and extra mozerella
Bake for 30 minutes.
* This recipe will less firm then regular manocotti due to the steak umms but you will not miss the noodles at all..
enjoy.

Same idea but in Lasagna!!
