Easy Chicken Enchilada



2 boneless chicken breasts (cooked and cut up into bite sized pieces or shred chicken)
1/2 cup fried onion and peppers
1 cup of lc tomato sauce add to that:
(1/2 to1 tablespoon cumin & 1/2 tablespoon chili powder)
2 ounce of cream cheese
1 tablespoon minced garlic
1/2 cup shredded cheddar or Mexican cheese

1/2 shredded cheese for topping

Warm all ingredients in a pan until cheeses are melted. Put in a baking pan. Cook at 350o for 30 minutes
~ I like to add the topping cheese after it comes out of the oven but you can put on before.~ 2 servings

Mozzarella Sticks



Mozzarella Sticks (only one of the four showing)

4 string cheeses
1 egg beaten
equal amounts of almond flour, soy flour and Parmesan cheese (I eyeballed this)
spices: salt, pepper, garlic powder
LC tomato sauce for dipping


In a plastic bag add flour, Parmesan cheese, and spices.

Dip cheese in egg then shake in plastic bag.

D eep fry the mozzarella sticks till golden brown. Serve with LC tomato sauce.

McGriddle



McGriddles or Pancakes
1 egg yolk
1 tablespoon oil
2 tablespoon almond flour
2 tablespoons cream
2 tablespoon vanilla whey protein
2 tablespoon SF maple syrup
1/4 teaspoon baking soda
2 packages of Splenda


Mix all ingredients together,(I use my Bullet) put in waffle iron until done
Then fry an egg and some bacon VIOLA McGriddle..

* For just plain waffles I add 1 teaspoon banana flavoring and chopped walnuts

Protein Pancakes

This recipe came out do delicious I am going to eat it every morning
I like using my Vanilla Whey Protein because it provides my morning intake of protein and shuts down my hunger



MM Pancakes that taste just like the real thing!!

1 tablespoon butter, melted
1 ounce of cream cheese, softened (I nuke for 20 seconds)
1 tablespoon oil
2 tablespoon Vanilla Whey Protein (Wal*Mart)
2 tablespoon walnuts
1/8 teaspoon baking soda

Mix all ingredients together, cover with plastic wrap and microwave for 1 minute.
Cut in half spread with butter and maple syrup ( I used Howard's Brand, 1 carb and made with Splenda (It tastes like real maple syrup))

Variations: add banana flavorings and/or sf chocolate chips

One Minute Muffin with Blueberry Topping

1 large egg, beaten
2 tablespoons of Vanilla Whey (Wal*Mart)
1 ounce cream cheese, soften (I nuke mine for 20 seconds)
1 tablespoon olive oil
1 tablespoon butter, melted
1/4 teaspoon baking soda
2 tablespoons of walnuts chopped
2 packages of Splenda
Topping: Waldon Farms Blueberry Spread

Mix together, put in glass bowl,cover with saran wrap and microwaved for 45 seconds to 1 minute. Remove from glass bowl, cut in half. I spread more butter and blueberry spread on top of it . It was delicious.


Oh tomorrow I would going to make this for breakfast adding a little cinnamon and instead of the blueberry spread I think I am going to try butter and SF maple syrup... ty for replies

Applebee's Hot Wings or Chicken Nuggets




So I went out to Applebee's with my hubby last night and he ordered Hot Wings.. (Boneless Chicken with Buffalo Sauce) With a side of Ranch Dressing... (drool) So I took a little bite from the corner so I could see if I could copy cat the recipe... and look see what I've come up with.. I hope you will enjoy..

2 boneless chicken breast
smoke flavoring
2 eggs whisked

1/2 cup almond flour
6 small scoops soy flour
1 teaspoon baking powder
1/2-1 pack of Splenda
2 tablespoon Parmesan cheese
seasoning: salt, pepper, garlic powder

*First I took two large chicken breast and cleaned and cut into pieces.
*Then I sprayed them lightly with smoke seasoning... (I took a bottle of smoke flavoring and put it into a spray bottle because I am heavy handed. * This can be omitted from recipe)
*Take chicken breast let sit in the whisked eggs
*Sift rest of the ingredients and put into a large zip lock type of bag. Add chicken pieces a few at a time, then shake.
*I then put into deep fat frier till golden brown.
*Season again with salt.
This makes a lot of chicken tenders but I only made enough buffalo sauce for a single serving

Buffalo Sauce

1/2 cups Franks Buffalo Sauce (or what ever brand you prefer)
1 1/2 scoops of Soy powder..

Whisk together then microwave 1-1 1/2 minutes stir until thicken.
Drench chicken tenders in buffalo sauce.
Serve with Ranch Dressing and celery stalks just in case this is too hot to eat :)

Mexican Pizza

















(Serves one very hungry person :)


1/4 cup almond flour
2 tablespoons of cream
2 tablespoons of grated Parmesan cheese
2 tablespoon of shredded mozzarella (I just dip my fingertips in the bag and pull some out)
I used a little soy powder to dust


Mix above ingredients form into a ball dusting it with the soy flour (or what ever type of flour you like)

Pre Heat oven 400o
Grease a cast iron skillet,(can use pizza pan) place dough in it.. Place a piece of Saran Wrap over top and roll out into a circle. Bake for 8 minutes.

4 ounces shaved steak or ground beef
oil
taco seasoning
2 tablespoons water
2 ounces cream cheese, softened
shredded Mexican cheese

Fry shaved steak and or ground beef in oi till brown.Add  taco seasoning: cumin, chili powder, paprika, red pepper, dehydrated onion and garlic, salt, pepper and water. Let simmer till water reduces.

When the crust is done take out of oven and spread cream cheese, add beef and top with shredded cheddar
Put back into oven for 12-15 minutes.
Top with all your favorite toppings, mine are tomato and olives, then loads of sour cream. This recipe was a little heavy so I ate it right out the pan!!

Nacho Cheese Crackers


ALMOND THINS
3 ounces almond flour (1 cup)
2 teaspoons granular Splenda
1 egg
1 teaspoon of Nacho Cheese Popcorn Sprinkles
1-2 scoops of Soy Powder
chilli powder
paprika

Pre Heat Oven 350
Mix all ingredients well in a small bowl. Everything should be moist and the dough should hold together somewhat add one scoop of soy flour and the other scoop if needed to make it more pliable.
On a very well greased cookie sheet put the dough on top cover with saran wrap and with a rolling pin, roll to a very thin layer.
Next I took the opposite side of my meat mallet and made tiny holes in dough.
Sprinkle with a little more Nacho Cheese Popcorn Sprinkles, paprika and chilli powder.

Bake for 12 minutes

Butter Pecan Brulee





Butter-Pecan Creme
2 cups cream
4 egg yolks
1/2 teaspoon vanilla
Dash of salt
2 tablespoons Splenda

Heat cream over medium heat, just until bubbles start to form.
Remove from heat and let cool slightly.
In a bowl, whisk together egg yolks, vanilla, salt and Splenda.
Gradually whisk in cream.
Strain mixture.
Divide into four custard cups.
Bake in a water bath for 25-30 minutes at 350 degrees.
Custards should be set, but still jiggly.
Chill for one hour.
Make butter-pecan topping and divide between between cups.
Refrigerate for four more hours or overnight.

Butter-Pecan Topping:
2 tablespoon butter
2 Tablespoon Cream
1/4 cup pecans - finely chopped
4 packages of Splenda

Melt butter.
Stir in pecans, cream, and Splenda.
Heat just until nuts begin to color, being careful not to burn!
Add to Brulee when Brulee is cooled
