Upside Down Quiche



Preheat Oven 350o

In a bullet/blender add

2 eggs
1 1/2 ounce shredded cheese
1 tablespoon butter, soft
3 tablespoons cream
salt/pepper
Blend until fully incorporated, pour into a large greased Purex bowl because this recipe will double in size.

Sprinkle over top almond flour and paprika, bake for 30 minutes.
While baking fry 2 pieces of bacon.  Cut up into pieces and when quiche is done add to top.

Chicken With Faux Baked Bean Sauce






4 ounce chicken breast,
   pounded flat, grilled
3 piece of bacon, cooked
1 slice of cheese

Sauce
1 tablespoon tomato paste
1 teaspoon yellow mustard
1 teaspoon sugar free maple syrup

Combine ingredients and warm.

Layer chicken, sauce, bacon, cheese and broil.  Put warmed sauce over this.

Chicken Crust Pizza



1 boneless chicken breast
1/2 egg beaten
1/4 cup mozzerella cheese
2 tablespoon Parm. cheese

Topping
2 tablespoons of favorite LC sauce
mozzerella
provalone cheese

Preheat Oven 425o
Mix together above ingredients and form a pizza crust.  Bake for 8 minutes.  Top with sauce and cheese

Coconut Bark




4 tablespoon coconut oil, melted but not in microwave
1 tablespoon cocoa
5 packs of blue sweetener
1 tablespoon peanut butter, chunky all natural
1 tablespoon heavy cream
12 almonds
(you will need 3 candy molds)



Mix first 5 ingredients by hand for around 5 minutes.

Pour 1 tablespoon of mixture in candy molds then add 4 almonds to that. Top with remaining mixture....Freeze

Almond Butter Bread






2 cups almond flour

1 eggs 

3/4 cup sour cream

1 Tablespoon vinegar 

1/2 teaspoon baking soda 

1/4 teaspoon salt 

1 packet Splenda (optional)


Mix all ingredients. Pour into a sprayed 8 1/2" by 4 1/2" loaf pan and smooth the top. Bake at 350 degrees for 30-35 minutes. Let cool before slicing. Can also be baked in muffin tins for slider buns.

Butterfinger Cookie Bars







I wanted to call these "Idon'tknowwhat'chacallembars" they are a cross between Butterfinger and a cookie bar

Mock Graham Crackers
1/4 cup almond flour
3 packages of Splenda
1/2  egg, beaten
1 tablespoon butter soft
1/2 teaspoon vanilla
6 drops of Capella graham cracker flavoring (optional)

Preheat Oven 375o
Mix all ingredients together and spread on a parchment lined small cookie sheet thin like a gram cracker.
Bake for around 12-15 until really brown. Cool and then crumble into bread crumb constancy.
(I had a bit more time so after I crumbled the cracker I put back in oven on 200o for 20 minutes more so the crumbs would be crispier)

Peanut Butter Filling
In a small bowl, combine:
4 tablespoons of peanut butter (same kind as above)
1  tablespoon butter, soften
3  packages Splenda
2 tablespoons Poly Dextrose (optional)
Mix well stir in Mock Graham Cracker Crumbs.


Chocolate
1 tablespoons unsalted butter, melted till liquid form
3 teaspoons cocoa
3 blue packages of sweetener
1 teaspoons heavy cream
1/2 teaspoon vanilla
Stir mixture for around 4 minutes

In a parchment lined plate take 1/2 of the chocolate and coat paper. Freeze for a few minutes till firm.
Add peanut butter mixture to the top of that and then pour rest of chocolate over that. Freeze.


Open Face Chicken Kiev

 Chicken Kiev w/ Bacon








1 1/2 tablespoons butter, softened
1/8 teaspoon garlic powder
1 teaspoon chopped fresh parsley
Mix above ingredients and form into 3 rounded mounds and freeze.

4 ounce boneless chicken breast,  pounded flat and seasoned with s&P and garlic powder
2 slices of bacon

Fry Bacon, remove from pan add chicken,cook till done
When chicken is done top with frozen butter and bacon.



*I served mine with a side of mashed cauliflower*

Buffalo Ranch Croquettes



Very messy to make but worth it ;)



1 large boneless chicken breast, cooked and shredded
2 ounces cream cheese, room temp.
1/4 cup LC Ranch Dressing... (I like buttermilk ranch)
2 tablespoons of Frank's Buffalo Sauce
1 tablespoon LC Flour
1 tablespoon diced celerly
Parmeson Cheese (powdered)



Preheat Oven 375o

In a frying pan add chicken and buffalo sauce, cook until buffalo sauce coats chicken. In a small bowl mix together ranch dressing and cream cheese, celery, and flour. Then add chicken mixture, stir well.



Messy Part

(I used a medium PC Scoop) Scoop out a level amount of mixture and sprinkle a generous amout of Parm. cheese then scoop mixture into hands and roll out in Parm. cheese.

Bake for around 10-12 minutes till golden brown.

Loaded Mashed Cauliflower with Chicken Medallions



Loaded Mashed Cauliflower


1/2 bag frozen cauliflower florets, cooked (I microwave for about 10 minutes)
2 tablespoons butter
salt and pepper

Place in Bullet or food processor. Process till mushy... like mashed potatoes.
Next add 2 tablespoons of cream and process again.
Top with bacon, sour cream, and cheese.

 Chicken Medallions
1 frozen boneless chicken breast
favorite spices

Microwave frozen chicken one minute or less, chicken should still be firm, this should help with the slicing. Slice chicken in very thin slices and season with spices and fry on each side till done...

Peanut Butter Cup for One

 
 
 
 





Chocolate
2 tablespoons unsalted butter, melted in microwave for about 20 seconds.
(melted with a few lumps left in it...when stirred lumps should disappear)
2 blue (Equal) packages of sweetener
1 teaspoon cocoa
1 teaspoon heavy cream
Stir until it starts to thicken. Add 1/2 mixture to mold, freeze for a few minutes till it firm.

 Peanut Butter Cream
2 tablespoon peanut butter
1 tablespoon heavy cream
2 packages of Splenda


Mix together and then spread on bottom layer of chocolate. Pour remaining chocolate over the top and freeze for 1 hour or more.

 * This time I added chopped walnuts to the chocolate mixture.

Mashed Potatoes.... Kinda



1 bag frozen cauliflower florets (microwave 10 minutes and drained)
2 tablespooons butter
heavy cream
salt and pepper
paprika
parsley


(I use my bullet)  Place cooked cauliflower in food processor and chop until mushy. (may have a few chunks)
Add butter, salt & pepper, and then cream until you have the consistancy of mashed potatoes.
Sprinkle with paprikia and parsley.

*Above recipe is so delicious but add sour cream, bacon, and cheese and BAM!! Loaded Fake Mashed Taters!!

Chicken Lasagna



1 boneless chicken breast, butterflied, pounded flat
1/4 cup ricotta cheese
1/3 cup shredded mozzerella (and a little extra for topping)
3 tablespoons low carb tomato sauce
1/2 package of Splenda


Preheat oven 450o
Brown chicken on both sides.
Combine ricotta, mozzeralla and Splenda in bowl.
When chicken is done browning lay flat and spoon 2 tablespoons of sauce over it.  Add cheese mixture to one side of chicken and fold over.  Insert toothpick to help hold it together.  
Add the rest of tomato sauce on top and sprinkle with more mozzella.  Bake for 20 minutes.

Shredded, cooked chicken
Favorite Low Carb tomato sauce
Shredded mozzerella
oregano

Layer all ingredients on a small paper plate and microwave for 1 minute.

Low Carb Totillas




One cup of egg whites
3 tablespoons psyllium fiber (I use Konsyl, I purchased from Walmart)

Let this mixture sit for several minutes and stir once in a while.

In a sprayed non-stick pan that has been preheated, place a couple of tablespoons of the mixture and tilt the pan to cover the bottom, flip when top is dry, then cook for a little while and remove and repeat the process.
When finished I sprinkled with  cinnamon and Spenda.

*I am going to try rolling up the finished tortillas (because they are flexable),  and  deep fry for cannolli shells.
* Also I will cut into triangles, fry and add nacho cheese sprinkles
*You also get a good dose of fiber from this recipe :)

Sweet Mustard Chicken



1/2 cup yellow mustard
1/4 cup sugar free maple syrup
1 tablespoon basamic vinegar
Salt & Pepper
1 large boneless chicken breast, pounded flat.

Except for chicken, mix all ingredients above, reserving 1/2 for a dipping sauce after. 
Dredge chicken in mixture and fry until done.  (can be baked)

Blackened Chicken



2 tablespoons coffee grounds
½ teaspoon ground chipotle (the smokey factor)
1 teaspoon unsweetened cocoa  powder
¼ teaspoon cinnamon
½ tablespoon garlic powder
1 tablespoon dried oregano
1 tablespoon cumin
1 teaspoon sea salt

2 tablespoons Oil
1 chicken breast, pounded thin

In a small empty spice jar combine all dry ingredients, shake until well combined.

Pre heat skillet with oil.
Coat  both sides of chicken with seasoning.
Cook chicken on high until both sides are brown, turn heat down and continue cooking until done.

Easy Homemade Freezable Butter


For this recipe I used my Bullet.   I poured in about a pint of cream and a small amount of salt into a "Bullet-Blender,"  turned it on...  First it will make whipped cream but continue blending and shaking.   It will take about 5 or so minutes.  You will know you have butter when the liquid seperates from the mixture.   Do a taste test to see if you have added enough salt.  
When complete you can mold into sticks of butter or put it into candy molds and freeze for a later date.
*Don't add salt if you are going to use in chocolate making
*Add different ingredients for flavored butters such as garlic and parsley.

Easy Freezer Chocolate



3 sticks unsalted butter
3 tablespoons cocoa
12 or more blue packages of sweetener (taste as you go)
3 tablespoon heavy cream
1 teaspoon vanilla
larger bowl full of ice

Melt butter in microwave,  stir in remaining ingredients.   Take bowl and place on top of bowl filled with ice.  Stir until mixture starts to thicken.  Pour chocolate into a small parchment lined pan/plate.  Freeze and use as needed.
* parchment paper, freezer paper or wax paper helps to remove chocolate once cooled.

* You can use chocolate molds.
* I cut my squares with a pizza cutter and then placed into a baggy, then back into freezer.
* The butter in recipe will soften at room temp.,  so it is better to keep in freezer until you use it.
* "blue packettes, Equal" is the only sweetener I find to work well with low-carb chocolates.

White Pizza

1 Joesphs Pita (the one that states it has 5 carbs)


1/4 teaspoon salt
1/4 teaspoon pepper
2 ounces of cream cheese, softened
2 ounces shredded mozzarella cheese
2 ounces shredded provolone cheese
2 tablespoons of grated parmesan cheese
2 garlic cloves, minced or pressed
sprinkle of dyhydrated basil leaves
sprinle oregano leaves
6 cherry tomatoes cut in half
1 teaspoon olive oil
parsley for garnish

Preheat oven to 400 degrees

Combine cheeses and spices.  Place pita in pan and spread cheeses on top.  Add tomoto and drizzle olive oil, garnish with parsley.
Bake 7-12 minutes

*This also makes an awesome dip for veggies*

Eggs in a Basket









Turn a small microwave safe glass bowl upside down and cover it with bacon,
making sure to tuck bacon edges underneath the bowl.
Microwave until desired crispiness is achived.
Cool, add two fried eggs.. YUM

Tommorrow I am going to make the same bowl and add turkey, lettuce, tomato, and mayo.

Jalapeno Poppers









8 jalapenos
8 ounces cream cheese
16 slices of bacon

Preheat Oven 425o

Slice each jalapeno length wise,  remove seeds, and wash . Stuff each jalapeno with 1/2 ounce cream cheese and wrap with a  piece of bacon around it.
Bake for 25 minutes or until jalapenos are tender.

Coleslaw







1 regular sized bag of coleslaw mix
3 or more tablespoons of mayonaise (you are going to have to eyeball this)
A few dashes of celery seed
1 cap full apple cidar vinager (1 teaspoon more of less)
3 packages Splenda
Dried parsely for garnish

In bowl add coleslaw mix vinager and Splenda. Mix in mayonaise 1 tablespoon at a time until desire results are met. Add celery seed and mix again. Sprinkle parsley over top.

Baked Stuffed Tomatoes






2 large tomatoes, halved
1/4 cup freshly grated Parmesan cheese
1 ounce provolone cheese, shredded
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh oregano
1 garlic clove, minced
olive oil
1/2 tsp salt
1/8 teaspoon pepper




Preheat oven to 450° F.
Cut a thin slice off top or bottom of tomato to make it stand flat.
Scoop out the seeds.
In a small bowl combine: Parmesan cheese and spices. Drizzle oil to make the Parmesan Cheese moist. Top with provolone cheese and bake for 15 minutes.

* I had left over steak from last night dinner so I cut it into small peices and fried with a little olive oil and garlic*

Stuffed Cucumber with Steak on the Barbie







First carve out a cucumber but leave ends intact.
In bowl add: diced garlic, onion, tomatoes, olives, basil, oregano, salt, pepper.
Next toss with some basalmic vinager and oil..
Stuff the cucumber... and eat.. YUM..

Reese's Peanut Butter Pie


Yumm Update on bottom
Preheat oven 375o

Crust
1 cup peanut butter
4 packages of Splenda (taste, you may like it sweeter)

Spread crust in a glass pie pan but do not let it go up the sides.
Bake for about 12-15 minutes

Filling
8 ounces of cream cheese, soft and mixed with 4 packages of Splenda
 (again taste to see if it sweet enough)
2 cups of whipped cream  
(I make my own using cream, Splenda, and vanilla)

Fold cream cheese into whipped cream mixture, refrigerate about one hour. Then add to cooled crust and add topping, below.

Topping
Sugar free chococolate

Melt chocolate in microwave. 
(after I melted the chocolate I had to put the bowl in an ice water bath to thicken it a bit)

Drizzle chocolate over pie.  Take a toothpick and drag the chocolate length wise then width wise to make a decoration....

~I just made the above recipe but insead of cooking the crust I added cream to it to make it more spreadable and then spread it in my pie pan.  Added the cream cheese, whipped cream mixture, refrigerated one hour and then drizzled the chocolate and returned it to the fridge for 1/2 hour ... I then grabbed my spoon and ate 1/2 of it LOL... YUM~

Deep Fried Stuffed Hot Dogs



Hot Dog
Cheddar Cheese
Bacon Slice

Cut a slit in a hot dog but do not cut the ends.  Insert pieces of cheddar cheese then wrap in bacon.  Deep Fry!! YUM

Faux Couscous Pompadori

Chicken Faux Couscous Pompadori






1 cup diced chicken, cooked and kept warm

2 cups of cauliflower, riced
(I used frozen cauliflower and my P-Chef chopper)

1 tomato, seeded and chopped
2 cloves of garlic minced
olive oil
salt & pepper
dried basil
garlic powder


Place cauliflower on a paper plate, drizzled with olive oil, salt and pepper, cover with plastic wrap and microwave for 2 minutes.

In fry pan add: cauliflower, garlic, tomato, and a dash of each, basil, garlic powder, salt and pepper, and a splash more of olive oil.

Heat till all the ingrediants marry, about 2 minutes. Add chicken, toss and serve.

Big Mac Attack With Bacon and Cheddar


Big Mac Sauce:

1 tablespoon of Mayo
A few drops of low sugar ketchup
1/2 pack splenda
A few shakes of dried onion
Mix together until ketchup is no longer visible, mixuture should be pink.

While your burger is cooking:
Chop some baby dill pickles and lettuce then add to Big Mac Sauce.

When burger is finished put a piece of cheddar on top then top with bacon and eat away.
(I don't like my cheese melted but if you do like it melted, melt away)

Taco, Bacon, Ranch Salad

Taco, Bacon, Ranch Salad






For single serving size of taco seasoning I added equal amounts of below to my browned ground beef:

chili  powder
garlic salt
cumin
paprika
red pepper
dehydrated onion
dehydrated garlic

I made a salad with lettuce, tomato, chopped cooked bacon, and Ranch dressing. Add taco mix over top.. VIOLA

Chocolate Fudge

Chocolate Fudge



1/4 cup + 1 tablespoon butter, melted
3 tablespoons of cocoa
24 "blue" packets of sweetener (again this is the only sweetener that goes well with chocolate for me)
1 teaspoon vanilla
8 ounce cream cheese, softened
1/2 cup chopped nuts (optional)

Melt butter, add cocoa and sweetener stir well.
Add cream cheese and vanilla, stir well until you see all cream cheese has been well incorporated.
Stir in nuts and spread mixture in lightly greased 8-inch square pan.
Refrigerate until firm.

Banana-Coconut Bread

Preheat Oven 350o

3/4 cup coconut flour
1/2 cup butter, softened
6 eggs, beaten
3 tablespoons of S/F maple syrup
8 packages Splenda
1 tablespoon banana
flavoring
S/F chocolate chips, optional
Combine all ingredients till smooth. Place batter into 2 small mini loaf pans, bake for 35-40 minutes

Basamic Steak


1 pound shaved steak

1 large onion, sliced thin

1 pepper, seeded and sliced thin

1 chopped tomato, seeded and chopped

1 clove garlic, minced

2 tablespoons olive oil (or more)

2 tablespoons basalmic vinager

Cheese Wiz

Fry onion and peppers till tender, and garlic and shaved steak. Cook untill steak is done. Add a tomato. Cook for 2 more minutes. Take off burner and add a spash or two of basamic vinager and a garnish of cheese wiz.

Hearty Quick Bread

(pic is lemon poppy seed version)
 
1/2 cup sour cream
6 eggs, beaten
1/2 cup oil
10 packages of Splenda
1 teaspoon: baking soda & baking powder
1 tablespoon Cinnamon
1 tablespoon banana flavoring
3/4 cup coconut flour
nuts

Preheat Oven 350
Combine all ingredients besides nuts, wisk till there are no lumps in batter, add in nuts (I use walnuts)
bake for 40 minutes...
Cool
Variations:  
Omit banana flavoring and add all spice for spice cake
Omit cinnamon and banana flavoring then add 1 1/2 tablespoons  lemon flavoring and 1 tablespoons of  poppy seeds.  
I freeze this...... for lunch I took out a few slices and made french toast..
